As the title says, I think this would be reasonably useful and in turn wouldn't hurt the game.

Problem is, cargo trucks are considered to be vehicles just like any other so AI automatically approaches to destroy them because they are always occupied by enemy soldier. Needles to say this is counter intuitive since there is no reason why wouldn't you want to get some rp and unlock a random weapon.

Other problem is, while attempting to hijack a cargo truck, one would often get killed in the process because the truck usually gets destroyed at the moments of hijacking.

the only time this happens is when you pull the drivers out and the cargo truck is marked as neutral so friendly ai throw greandes at the driver and kill him or theres a nearby tank that shoots at the enemy and kills the cargo

Sometimes for some reason AIs throws a nades even when the driver is still inside the truck, so there must be some other explanation for their behavior...

yeah the grenade throwing AI is some times BS that is the explination, up until a few updates ago, the NPC didn't need to know you where there to throw a grenade at you.

There you can see AI throwing 2 grenades at the cargo truck. The second one almost killed the player.
